Meatless Monday Recipes: High Protein Fruit Pizza

Fruit pizza is a great dessert for the summer time. But calories add up fast when using a pre-packaged cookie dough crust and cream cheese topping.

In this version of fruit pizza, the crust is super simple! The base is made out of  3 main ingredients: oats which contain 17 grams of protein per every 100 grams,  assorted seeds (flax, hemp, chia, sunflower) to add flavor and fiber and some honey for sweetness. No additional sugar required!

And instead of a heavy cream cheese topping, I used a non-dairy yogurt (coconut in this case). However you could always use a greek yogurt or even coconut whipped cream if you wanted to change the consistency of the ‘frosting’.

Then all that’s left is choosing your fruits and toppings. Blueberries, strawberries, raspberries, kiwi and/or blackberries are great options for the summer months.

Ingredients
For the crust:

Instructions
  1. Preheat oven to 350ºF or 180ºC
  2. Line a 9 inch baking dish with parchment or grease the pan with coconut oil.
  3. Combine all ingredients for the crust in a large bowl. Stir until mixed evenly
  4. Create an even layer of crust in the baking dish. ( use another piece of parchment paper to prevent it from sticking to your hands)
  5. Bake for 10-15 minutes. (until it starts to harden)
  6. Let cool completely.
  7. Spread yogurt onto crust leaving about 1/2 inch of crust uncovered.
  8. Arrange fruit to your liking. & Enjoy!
